Tip: Flat-Leaf Parsley

Flat-leaf parsley, also called Italian parsley, has a more pungent flavor and is preferable to the more common curly-leaf parsley. Wash fresh parsley and shake off the excess moisture, then wrap the parsley in damp paper towels and store for up to 1 week in a plastic bag in the refrigerator. Avoid using dried parsley, which has little of fresh parsley's distinctive flavor.
